Q. I am looking for receipes for Gar fish. Can you help?

A. The garfish is commonly found in Australia and New Zealand and is often used for bait, however it can be eaten, usually grilled, and has a delicate taste. There are many fine bones but they can be eaten. To prepare, scale and gut. Split from gut cavity to tail, peel out spine and cut away rib bones. Coat with flour, dip in beaten egg (add a good pinch of dried tarragon) and coat with breadcrumbs. Grill or barbecue. Does not take long to cook.
